Fruit and Honey Bars

So on to my real post that I was going to do.

I was reading my Weight Watchers magazine tonight. Yes, a Saturday night I am sitting home reading a magazine....how pathetic is that. And that is another long story. Haha. Not really. But I came across a recipe that I want to try. I haven't yet because I didn't have the ingredients and I don't feel like going to the grocery at 10PM, even though the store is always empty. But here is the recipe:

1/3 C honey
2 large eggs
1/2 tsp salt
1 C old-fashioned rolled oats
1/2 C instant nonfat dry milk
1/2 C each shelled unsalted pumpkin seeds; unsweetened shredded coconut; ground flax seeds; dried apricots;, chopped; and dried cherries
1/4 C whole wheat flour

1.Preheat oven to 350. Line 9-inch square baking pan with nonstick foil.
2.Beat honey, eggs, and salt with fork in small bowl until well blended. Put oats, dry milk, pumpkin seeds, coconut, flax seeds, apricots, cherries, and flour in food processor and pulse until finely chopped. Add honey mixture to food processor and pulse until mixture is evenly moistened.
3.Transfer dough to baking pan; press into even layer with dampened fingers. Bake until center in set and edges are browned, about 20 minutes. Let cool slightly on rack, 10 minutes. Holding foil, transfer bar from pan to cutting board. Cut into 20 (1 1/2-inch) bars. Let cool completely, peel off foil.

Per serving (1 bar): 118 cal, 5g total fat, 2g sat. fat, 0g trans fat, 22mg chol, 78mg sod, 16g total carb, 10g total sugar, 2g fib, 4g prot, 10mg calc. PointsPlus value: 3

I so can't wait to try these out. I have been struggling with snacky kinds of foods. So I am for trying out something new!!
